Vegan Buffalo Tacos
Do you love tacos?? I sure do! I needed a way to enjoy a healthy taco fix and these were just the ticket. Totally Meat and dairy Free

1 Large Cauliflower head- chop into cubes or florets for larger pieces
1 Tbls Organic Olive Oil
1/2c Buffalo Sauce (I prefer Annie's)
1/2 medium chopped white onion
2 Ripe Avocado's
1 tsp Salt
1 tsp Black pepper
4 Multigrain or Sprouted Wheat 8in. Tortillas
1 Romaine Lettuce head
1 15oz. Can Organic Black beans
4 Tbls Annie's Vegan Ranch Dressing
- Preheat oven to 400 degrees. Place chopped florets of Cauliflower and chopped onion on a sheet pan, toss with hands with olive oil, buffalo sauce, salt and pepper. Bake for 20 Minutes. For more crisp place oven on broil for an additional 15 minutes.
- Layout out tortillas and place 3 long romaine leaves on top of the tortillas. Slice Avocado's, and place on top of lettuce, utilizing about 1/2 of a 1/2 of an avocado for each tortilla.
- Drain and cook blacks beans over heat with a dash of salt for 5-8 minutes. For more flavor add 2 tbls of Organic Taco seasoning and 1 tbls of water. Divide the beans evenly among the 4 tortillas.
- Use a spatula and top tortillas with baked cauliflower. Finish with a drizzle vegan ranch dressing and a maybe just a little more Buffalo sauce. Serve & Enjoy!
